Chicken Taquitos-$3.05

Tonight's dinner was Oven Baked Chicken Taquitos and Spanish Rice (FREE, from a packet, with a coupon, on sale!) I have to say they were pretty yummy! I really wanted to marinate the chicken in a tequila lime marinade, but decided to skip the liquor due to my pregnancy. I realize that it is said that the liquor burns off, but only after it has simmered for quite a while, and frankly, that amount of time usually dries it out. So I was left with a fairly simple mixture.

1 large chicken breast-1.32
1 lime-.20
handful of cilantro-.06

17 corn tortillas-.56
1/4 cup sour cream-.16
1 cup Mexican blend cheese-.75

TOTAL-$3.05

Dice chicken and saute in skillet. Once cooked, remove from skillet and shred with 2 forks. Return to pan and add the zest of 1 lime along with the juice. De glaze the bits from bottom of pan. Off the heat, add chopped cilantro and shredded cheese. For a smokey taste, add a little cumin.

Warm corn tortillas for 1 min wrapped in a wet paper towel, under a plate cover if you have one, in the microwave. Then split the tortilla stack in two, flipping each so that the inner layer is now on the outer layer. Warm for an additional 30 seconds.

Fill the tortillas one at a time, keeping the rest wrapped in the towel as you work. Place in a oiled casserole dish. Spray taquitos with cooking spray.

Bake at 400 for approx 15-20 min.
